Turkey Tortilla Soup in Crockpot

  1. 1-1.5 lbs of turkey breast (variation is dependent on your preference of meat to soup ratio)
  2. 1 tsp of salt
  3. 1 tsp of pepper
  4. 2 cans of cream of chicken soup (10.5 oz)
  5. 1 cup of Pace picante sauce
  6. 8oz of whole kernel frozen corn
  7. Can of rinsed, drained black beans (15 oz)
  8. 1 ⅓ cup of water
  9. 1 tsp ground cumin
  10. 1 tsp of chili powder
  11. 1 tsp of ground cayenne pepper
  12. 1 small can of hatch green chiles (4.5 oz)

Optional Ingredients for Topping:

  1. Tortilla chips
  2. Shredded Mexican cheese
  3. Avocado slices
  4. Sliced lime

Cooking Instructions:

  1. Clean your turkey breast and cut into ½ inch pieces, season it with salt and pepper, and add it to your crockpot
  2. Add remaining ingredients into crockpot and mix
  3. Cook on low for 4-5 hours
  4. Serve in a bowl, topped with tortilla chips, shredded cheese, avocado slices, and a squeeze of lime. Instead of tortilla chips, we sometimes cut some flour tortillas into strips and fry them in vegetable oil, then season with salt and pepper.
