Ingredients:
- 1-1.5 lbs of turkey breast (variation is dependent on your preference of meat to soup ratio)
- 1 tsp of salt
- 1 tsp of pepper
- 2 cans of cream of chicken soup (10.5 oz)
- 1 cup of Pace picante sauce
- 8oz of whole kernel frozen corn
- Can of rinsed, drained black beans (15 oz)
- 1 ⅓ cup of water
- 1 tsp ground cumin
- 1 tsp of chili powder
- 1 tsp of ground cayenne pepper
- 1 small can of hatch green chiles (4.5 oz)
Optional Ingredients for Topping:
- Tortilla chips
- Shredded Mexican cheese
- Avocado slices
- Sliced lime
Cooking Instructions:
- Clean your turkey breast and cut into ½ inch pieces, season it with salt and pepper, and add it to your crockpot
- Add remaining ingredients into crockpot and mix
- Cook on low for 4-5 hours
- Serve in a bowl, topped with tortilla chips, shredded cheese, avocado slices, and a squeeze of lime. Instead of tortilla chips, we sometimes cut some flour tortillas into strips and fry them in vegetable oil, then season with salt and pepper.
