All of the leg recipes require you to cook the turkey the same way. I have a crockpot with a locking lid (yes, the locking lid is necessary) that I usually cook mine in, but I have been informed by some hip kids that you can cook them in an Instant Pot for about 90 minutes.
Freeze whatever meat and broth you don’t use and pull out later for other recipes.
